It’s a Veggie Photoshoot!

Beware, if you aren’t a fan of vegetables, you might not like this post. Ha!

Well, the veggies in the CSA boxes are getting a little easier to identify. Here’s what we got this week.

Because we’re headed on vacation for the next week and a half, I wanted to preserve everything. During the week, we try to eat as many of our CSA veggies as possible, usually planning meals around what we get. However, we’re not always able to use everything up, so I usually end up freezing some. This week I decided to start making a little baby food for Rylie! She’s not quite ready to start eating it yet, but I thought it was a good opportunity to use some of this week’s veggies.

I made a couple of varieties: a mix of carrots, green beans, and potatoes, a mix of peas, potatoes, and yellow zucchini, and straight up green beans. I hope Rylie enjoys it, and at least I can say that it tastes better than the stuff in the jars!

Rylie was a great help, as usual. She even shucked a few ears of corn. Earn your meal, girl! 🙂

I love that I can freeze what we aren’t going to use fresh, and then we can enjoy it later on. I have a large bag of frozen and chopped onions, sweet corn, zucchini, and green beans in the freezer so far. Of course, we love eating it fresh when we can. We even (surprisingly) enjoyed the beets we got last week!

Our own garden is doing well also. I picked a few jalapenos, and noticed that there are a few Roma tomatoes that are almost ready. Once again, the tomatoes are starting to overtake the garden. I even had to pull 2 random plants that must have survived the winter from last year’s tomato disaster.

 

As you can see, all of this work with vegetables wears a girl out.

Scratch that. Rylie doesn’t seem to want to nap when mom is around! Goofy girl.

OK, are you sick of vegetables yet? How about a few pictures of sweet little Rylie in a dress I wore when I was a baby.

If I were really on the ball, I’d have photos of myself in the dress to compare…

Well, better continue getting everything together for our little road trip! We’re off to Boulder, CO (Steve’s doing a half Iron Man triathlon) and Moab, UT (to visit Arches and Canyonlands National Parks). Wish us luck on our first long road trip with Rylie!

    I just picked up our haul, and a haul it was! 13 different veggies – woot! You’ll have to tell me what you did to like those beets. Soren loved them until last night – when he spit food out for the first time ever.

    Love the pictures of little Rylie!! She found her feet? Has she found her hand yet? That’s the best!

    So exciting to start making her food isn’t it? I was sad it really only lasted about 2 months. Then it’s on to even more fun combos though!
